Calabacitas

At the Sunday buffet at Casa Molina they have a vegetable dish called calabacitas which I believe translates to "little squashes". It contains yellow squash and zucchini, onions, cheese and lots of pepper. Below is my approximation with what I had on hand.

Calabacitas


2 tablespoons oil
1 onion, chopped
3 Anaheim peppers, chopped
3 cloves garlic, minced
7 or so yellow squash cut into bite sized pieces
salt and pepper to taste
1 15 ounce can fire roasted tomatoes
1/4 cup grated cheddar

Heat the oil over high heat in a large skillet. add the onions, peppers, garlic, squash, salt and pepper. Cover and cook, stirring occasionally, until the squash is pretty much cooked and everything is beginning to brown.


Add the tomatoes and cook a few minutes longer to allow the flavors to meld. Top with the cheese and slide into a bowl. This is a great veggie side for taco night.
